A rendering shows designs for Oishii, a sushi restaurant planned for the rooftop of Adair Park’s Building 2, overlooking downtown Woodstock.

The company behind Prime 120 and Under the Cork Tree is opening a sushi restaurant at Woodstock’s Adair Park next year.

Oishii will open next summer on the fourth floor rooftop level of Building 2 in the Adair Park community, the mixed-use development announced in a news release.

Pronounced “oy-she,” Oishii translates to “delicious” in Japanese.

The eatery is the latest from restaurant group Succulent Hospitality. Owners Jason Sheetz and William Sigley will make Oishii a “memorable destination dining spot,” according to Adair Park. The partners have over 60 years combined of restaurant experience.

The restaurant will feature a full Japanese sushi bar, featuring traditional rolls, sashimi, and creative takes on nigiri, as well as “fun and exciting” ramen dishes by Sigley.

The restaurant is designed by Abbi Williams and Red Door Design to have a light and airy atmosphere, with views of the downtown area.
